Grilled skirt steak in a garlic-and-lime marinade

My birthday was on Saturday, and for my birthday I decided to grill some steaks and sausage with a couple of friends and my dearest. I’d never really made my own marinade, but I’d tried a few from the bottle and figured I’d give it a go.

Ingredients for four

  • 1.5 lbs of skirt steak
  • 4 cloves of garlic, minced
  • 1 white onion, chopped
  • 2 limes (juice)
  • 1 cup olive oil
  • 1 tsp of sugar
  • 1/2 tbsp of oregano
  • 1/2 tsp of pepper
  • 1/2 tsp of paprika
  • Sea salt

Tools & cookware

  • Grill, coal and matches
  • Tongs
  • BBQ brush
  • Blender
  • Baking dish or large Tupperware

Instructions

  1. Mix the olive oil, sugar, oregano, pepper, paprika, garlic, onion and 1/2 of one of the limes (juice) in a blender or food processor.
  2. Salt the steaks generously with the sea salt and add the other half of one of the limes over the steaks.
  3. Pour the marinade over the steaks, saving some for later, and refrigerate for at least one hour. Do not refrigerate the steaks too much longer, as the acidity from the limes will begin to cook them.
  4. Grill the steaks to your liking. Re-apply the steaks with the sea salt, the remaining lime and brush over the marinade throughout.

I served these steaks with homemade French fries, biscuits, an oil-and-vinegar salad and Bush’s original baked beans.
