Pork in a lime and balsamic-vinegar sauce

This recipe has a pretty different mix of ingredients. It is a great combination of sweet and sour. The cool part is, the sweet part of the sauce comes from an unexpected source: the balsamic vinegar.

Ingredients

  • Two pork cutlets
  • 1/2 tsp oregano
  • 1/2 lime (juice)
  • 3 Tbsp Balsamic Vingar
  • 1 tbsp olive oil
  • 1 clove of garlic, minced
  • Salt & pepper

Tools & cookware

  • Grill
  • Sauce pan with a lid

Instructions

  • Season the pork with salt and pepper.
  • Grill or pan fry the pork. I choose to grill because, when presented with options, I usually go for the healthier option.
  • While the pork is grilling, in a small sauce pan, sautee the garlic in the olive oil.
  • Before the garlic gets too brown, add the vinegar, lime and oregano.
  • Cook covered on low-to-medium heat stirring occasionally until the sauce is halved (about five-to-seven minutes).
  • Serve sauce on top of cooked pork possibly with a side of white rice or mashed potatoes. Either side will mix well with the sauce.
Well, what do you think?
  1. How much balsamic do you use? The ingredient list doesn’t say.

  2. Jim, you’re right! I only noticed this after coming back to this recipe for the sauce. I wanted to try it on some grilled chicken rather than pork.

It was spectacular. I had it with a side of wheat couscous and a banana.
