Pork in a lime and balsamic-vinegar sauce

This recipe has a pretty different mix of ingredients. It is a great combination of sweet and sour. The cool part is, the sweet part of the sauce comes from an unexpected source: the balsamic vinegar.
Ingredients
- Two pork cutlets
- 1/2 tsp oregano
- 1/2 lime (juice)
- 3 Tbsp Balsamic Vingar
- 1 tbsp olive oil
- 1 clove of garlic, minced
- Salt & pepper
Tools & cookware
- Grill
- Sauce pan with a lid
Instructions
- Season the pork with salt and pepper.
- Grill or pan fry the pork. I choose to grill because, when presented with options, I usually go for the healthier option.
- While the pork is grilling, in a small sauce pan, sautee the garlic in the olive oil.
- Before the garlic gets too brown, add the vinegar, lime and oregano.
- Cook covered on low-to-medium heat stirring occasionally until the sauce is halved (about five-to-seven minutes).
- Serve sauce on top of cooked pork possibly with a side of white rice or mashed potatoes. Either side will mix well with the sauce.
How much balsamic do you use? The ingredient list doesn’t say.

Jim, you’re right! I only noticed this after coming back to this recipe for the sauce. I wanted to try it on some grilled chicken rather than pork.
It was spectacular. I had it with a side of wheat couscous and a banana.
